Delicious and Comforting Korean Beef Noodles

Ingredients

Scale
  • 1 pound beef chuck
  • 1 quart beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 tablespoon gochujang
  • 8 ounce udon or ramen noodles
  • Garnishes: sliced green onions, sesame seeds, fresh cilantro

Instructions

1. Brown the Beef: In a large pot or Dutch oven, heat the sesame oil over medium-high heat. Add the beef chuck pieces and brown them on all sides.

2. Add the Aromatics: Stir in the minced ginger and garlic. Cook for 1-2 minutes.

3. Build the Broth: Pour in the beef broth, soy sauce, brown sugar, black pepper, and gochujang. Stir to combine.

4. Simmer to Perfection: Bring to a boil, then reduce heat and simmer, covered, for 1.5 to 2 hours.

5. Cook the Noodles: Prepare the noodles according to package instructions. Drain and set aside.

6. Assemble the Dish: Remove the beef from the broth and adjust seasoning if needed.

7. Serve and Enjoy: Place noodles in bowls, top with beef, and ladle broth over. Garnish with green onions, sesame seeds, and cilantro.

Notes

For a gluten-free version, use gluten-free noodles and tamari instead of soy sauce.
