Layered Zucchini Ricotta Melts With Marinara is a delectable and satisfying vegetarian dish that combines the best of summer produce with classic Italian flavors.


Ingredients

  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • 2 cloves minced garlic
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish

Instructions

1. Preheat your oven to 375°F.

2. Prepare the zucchini by slicing it thinly lengthwise, lightly brush with olive oil, and season with salt and pepper.

3. Grill or roast the zucchini slices for 4-5 minutes per side until tender and slightly charred.

4. In a medium bowl, mix the ricotta cheese with the egg, Parmesan, Italian herbs, and minced garlic until smooth.

5. Spread 1/2 cup of marinara sauce in the bottom of a baking dish.

6. Layer the roasted zucchini slices over the marinara sauce, followed by a layer of the ricotta mixture and a handful of mozzarella cheese.

7. Repeat the layers until all ingredients are used, finishing with marinara sauce and mozzarella on top.

8. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.

9. Allow to rest for 5-10 minutes before serving, garnish with fresh basil if desired.

Notes

This dish can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
