  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1 cup heavy cream
  • 1 pound potato gnocchi
  • 1/2 cup Parmesan cheese
  • 2 cup fresh baby spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

1. Season the chicken breasts with garlic powder, lemon pepper, salt, and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken until it’s golden brown and cooked through. Remove the chicken from the skillet and set it aside.

2. In the same skillet, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chicken broth and lemon juice, bringing the mixture to a simmer.

3. Reduce the heat to low and pour in the heavy cream. Whisk in the Parmesan cheese, stirring until the sauce thickens slightly.

4. While the sauce is simmering, cook the gnocchi according to the package instructions. Drain the gnocchi and add it to the skillet with the sauce.

5. Slice the cooked chicken and return it to the skillet with the gnocchi and sauce. Add the fresh spinach and cook until it’s wilted. Adjust the seasoning with salt and pepper to your taste.

Notes

If you can’t find fresh gnocchi, you can use frozen or shelf-stable gnocchi instead. For the chicken, feel free to use thighs or a combination of dark and white meat.
