Ingredients
- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 1 lemon
- 2 tablespoon lemon juice
- 1 cup powdered sugar
- 2 tablespoon lemon juice
- 1 tablespoon milk
Instructions
1. Preheat your oven to 350°F. Grease a 9×13-inch baking pan.
2. In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, eggs, vanilla extract, lemon zest, and lemon juice until smooth and well combined.
3. Stir in the flour, baking powder, and salt until just combined. Gently fold in the grated zucchini.
4. Pour the batter into the prepared baking pan and spread it out evenly. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool completely.
5. In a small bowl, whisk together the powdered sugar, lemon juice, and milk until the glaze is smooth and pourable.
6. Drizzle the lemon glaze over the cooled Lemon Zucchini Bars. Let the glaze set for about 15 minutes before cutting the bars into squares and serving.
Notes
Grate the zucchini finely to create a soft texture.
Let the bars cool completely before adding the glaze to prevent it from melting.
Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.
