Description
This Loaded Breakfast Mac & Cheese is the ultimate morning comfort dish, layered with creamy cheese, crispy tots, savory sausage, and fluffy eggs.
Ingredients
2 tablespoons unsalted butter
1⁄2 medium yellow onion, diced
12 ounces breakfast sausage, removed from casing
2 tablespoons all-purpose flour
1 3⁄4 cups milk
4 ounces cream cheese, diced
2 cups shredded sharp cheddar cheese, divided
2 cups shredded monterey jack cheese, divided
8 ounces macaroni, cooked for 6 minutes, drained and rinsed with cool water
2 cups chopped tomatoes
10 ounces cooked tater tots
6 large eggs
3 tablespoons sliced scallion tops
Instructions
1. Preheat oven to 375°F and butter a 9×13-inch baking dish.
2. In a skillet, melt butter and sauté onions until soft. Add sausage and cook until browned.
3. Stir in flour, cook 1 minute, then whisk in milk. Simmer until thickened.
4. Add cream cheese and half of both shredded cheeses. Stir until smooth.
5. In a large bowl, mix cooked pasta, sausage mixture, tomatoes, most tater tots, and lightly scrambled eggs.
6. Pour into baking dish. Top with remaining cheese and tater tots.
7. Bake 20–25 minutes until golden and bubbly. Let rest 5 minutes.
8. Garnish with scallions and serve warm.
Notes
Parboil macaroni to prevent overcooking.
To make ahead, assemble and refrigerate overnight before baking.
Customize with veggies or spicy sausage.
