Ingredients

Scale
  • 4 large russet potatoes
  • 1 lb thinly sliced ribeye or sirloin beef
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 2 cups shredded provolone cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • Mayonnaise and Dijon mustard for drizzling
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes, then cut them into long, even strips, approximately 1/4 to 1/2 inch thick.
  3. Toss the potato strips with olive oil, garlic powder, salt, and black pepper. Spread them out in a single layer on a baking sheet.
  4. Bake the fries for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  5. In a skillet over medium-high heat, cook the thinly sliced beef for 3-5 minutes until browned. Remove from the pan and set aside.
  6. In the same skillet, sauté the sliced onions and bell peppers for about 5-7 minutes until softened and caramelized.
  7. Layer the crispy baked fries on a serving platter or in a shallow baking dish.
  8. Top the fries with the cooked beef, followed by the sautéed onions and bell peppers.
  9. Sprinkle the shredded provolone cheese over the entire dish.
  10. Place the loaded fries under the broiler for 2-3 minutes until the cheese is melted and bubbly.
  11. Drizzle a mixture of mayonnaise and Dijon mustard over the melted cheese.
  12. Garnish with fresh, chopped parsley and serve hot.
