Ingredients
- 1 pound ground beef
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cup elbow macaroni
- 2 tablespoon butter
- 2 tablespoon all-purpose flour
- 1 cup milk
- 1 can (10.5 ounce) condensed cheddar cheese soup
- 3 cup shredded cheddar cheese
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup ketchup
- 1/2 cup BBQ sauce
Instructions
1. Preheat your oven to 350°F and grease a 9×13 inch baking dish.
2. In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, garlic, Worcestershire sauce, salt, and pepper. Mix well until the ingredients are fully incorporated.
3. Press the meatloaf mixture evenly into the prepared baking dish. Spread the ketchup and BBQ sauce over the top and bake for 30 minutes.
4. While the meatloaf is baking, cook the elbow macaroni according to the package instructions until al dente, then drain and set aside.
5. In a large pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually add the milk, whisking constantly, until the mixture is smooth. Stir in the condensed cheddar cheese soup, 2 cup of shredded cheese, and the seasonings (salt, pepper, paprika, garlic powder, and onion powder).
6. Gently stir the cooked macaroni into the cheese sauce until well coated.
7. Remove the meatloaf from the oven and spread the mac and cheese mixture evenly over the top. Sprinkle the remaining 1 cup of shredded cheese on top.
8. Return the casserole to the oven and bake for an additional 17-20 minutes, or until the cheese is melted and bubbly.
9. Let the Mac and Cheese Meatloaf Casserole sit for 5 minutes before serving, and enjoy!
Notes
Use high-quality, lean ground beef for the meatloaf to avoid excess grease and dryness.
Be mindful not to overmix the meatloaf ingredients, as this can result in a dense and tough texture.
Cook the elbow macaroni just until al dente to prevent it from becoming mushy in the casserole.
Experiment with different types of cheese in the mac and cheese sauce to find your perfect flavor profile.
