Ingredients
- 8 large eggs

- 1/2 cup bell peppers, diced
- 1/4 cup onion, finely chopped
- 1/2 cup cooked bacon, ham, or sausage, crumbled
- 1/4 cup spinach or kale, chopped
Instructions
1. Preheat Oven: Preheat your oven to 375°F and grease a 12-cup muffin tin with cooking spray or butter.
2. Whisk Eggs & Seasoning: In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder (if using) until well combined.
3. Prep Fillings: Chop the vegetables, shred the cheese, and cook any meats (like bacon or sausage) if needed.
4. Divide Fillings: Evenly distribute the cheese, veggies, and meats into each muffin cup.
5. Pour Egg Mixture: Pour the egg mixture over the fillings, filling each cup about three-quarters full.
6. Bake: Bake the egg muffins for 18-22 minutes, or until they’re set and lightly golden on top.
7. Cool & Remove: Let the muffins rest in the tin for 5 minutes, then run a knife around the edges and gently lift them out.
