Ingredients
- 1 bag (10 ounce) frozen chopped spinach, thawed and squeezed dry
- 8 ounce cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 sheets puff pastry, thawed
Instructions
1. Preheat your oven to 400°F and line baking sheets with parchment paper.
2. Thaw the frozen spinach and squeeze out as much liquid as possible using a clean kitchen towel or paper towels.
3. In a bowl, combine the cream cheese, Parmesan cheese, mayonnaise, garlic powder, onion powder, black pepper, and red pepper flakes (if using). Mix until smooth.
4. Add the squeezed-dry spinach to the cream cheese mixture and stir until well combined.
5. Unfold one sheet of puff pastry onto a lightly floured surface. Spread half of the spinach mixture evenly over the puff pastry, leaving about 1/2 inch border around the edges.
6. Starting at the long side, roll up the puff pastry jelly-roll style into a tight log. Repeat with the second sheet of puff pastry and remaining spinach mixture.
7. Using a sharp knife, cut each log into 1/2-inch thick slices. Place the slices on the prepared baking sheets, spacing them about 1 inch apart.
8. Bake for 15-18 minutes until golden brown and puffed.
9. Remove from the oven and let cool for a few minutes before serving. Serve warm and enjoy!
