Ingredients
- 1 lb ground chicken
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup finely chopped onion
- 1/2 cup breadcrumbs
- 2 tablespoon fresh parsley, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 can (28 ounce) crushed tomatoes
- 1/2 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1/2 cup heavy cream
- 2 tablespoon fresh basil, chopped
- 2 tablespoon fresh parsley, chopped
Instructions
1. In a large bowl, combine the ground chicken, Parmesan, garlic, onion, breadcrumbs, parsley, Italian seasoning, salt, and pepper. Mix the ingredients until just combined, being careful not to overmix.
2. Roll the meatball mixture into 1-inch balls, ensuring they’re all uniform in size.
3. Heat a generous amount of olive oil in a large skillet over medium heat. Brown the meatballs on all sides until they’re golden in color, but not fully cooked through. Remove the meatballs from the pan and set them aside.
4. In the same skillet, add 1 tablespoon of olive oil and the minced garlic. Sauté the garlic until fragrant, then stir in the crushed tomatoes, Italian seasoning, salt, and pepper. Let the sauce simmer for about 10 minutes to allow the flavors to meld.
5. Stir the heavy cream, fresh basil, and fresh parsley into the sauce, mixing well to incorporate all the flavors.
6. Return the browned meatballs to the skillet, cover, and let them simmer for 15-20 minutes, or until they’re cooked through and the sauce has thickened.
7. Garnish the Marry Me Chicken Meatballs with extra Parmesan cheese, fresh basil, or a drizzle of olive oil. Serve them over pasta, rice, or with crusty bread for a complete and satisfying meal.
Notes
For those following a dairy-free diet, you can easily substitute the heavy cream with coconut cream.
Add a kick of heat to your Marry Me Chicken Meatballs by including diced jalapeños or a sprinkle of red pepper flakes.
To make this dish gluten-free, simply swap out the regular breadcrumbs for gluten-free breadcrumbs or almond flour.
For an extra nutritional boost, try grating some zucchini or carrots directly into the meatball mixture.
