Ingredients

Scale
  • 1 cup sun-dried tomatoes
  • 2 cup heavy whipping cream
  • 4 cup fresh baby spinach
  • 2 cup rotisserie chicken, shredded
  • 8 ounce cream cheese
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cup chicken broth
  • 1/2 cup tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
  • 2 cup uncooked pasta
  • 1/2 cup grated Parmesan cheese

Instructions

1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until fragrant and softened.

2. Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.

3. Pour in the chicken broth, heavy cream, basil, salt, Italian seasoning, garlic powder, and crushed red pepper. Bring the mixture to a simmer.

4. Add the uncooked pasta and cook until tender, about 8-10 minutes, stirring occasionally.

5. Stir in the spinach and shredded chicken, cooking until the spinach wilts and the chicken is heated through.

6. Add the cubed cream cheese and stir until fully melted and the soup is creamy.

7. Finish by stirring in the Parmesan cheese. Adjust the seasoning to taste.

8. Ladle the soup into bowls, garnish with extra basil and Parmesan, and enjoy this rich, comforting dish!

Notes

For a vegetarian option, omit the chicken and use vegetable broth.

Adjust spice levels to taste by reducing or increasing crushed red pepper.

For gluten-free adaptation, use gluten-free pasta or substitute with diced potatoes or cauliflower florets.
