Marry Me Sausage Orzo Soup: A Hearty and Flavorful One-Pot Delight
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 2 celery stalks, diced
- 1 can (14.5 ounce) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 4 cup chicken broth
- 1 cup orzo pasta
- 3 cup fresh spinach, chopped
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the Italian sausage and cook until browned, breaking it up into crumbles. Remove any excess fat.
3. Add the diced onion, garlic, carrot, and celery to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
4. Stir in the diced tomatoes, oregano, basil, and red pepper flakes (if using). Cook for 2 minutes, allowing the flavors to blend.
5. Pour in the chicken broth and bring the mixture to a boil.
6. Add the orzo pasta and cook according to the package instructions, about 8-10 minutes, until al dente.
7. Stir in the chopped spinach and cook for an additional 2 minutes, or until the spinach is wilted.
8. Season the soup with salt and pepper to taste.
