Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 3 tablespoon olive oil
- 2 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cup cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- Salt and pepper, to taste
Instructions
1. In a bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken and ensure it’s well-coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
2. Grill the chicken over medium-high heat for 6-7 minutes per side, or sear it in a hot skillet on the stovetop for the same amount of time. Let the chicken rest for 5 minutes before slicing it into bite-sized pieces.
3. In a bowl, mix together the Greek yogurt, lemon juice, olive oil, garlic, and fresh dill. Season with salt and pepper to taste.
4. Divide the cooked rice among serving bowls. Top each bowl with slices of the marinated chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
5. Drizzle the tzatziki sauce over the top and finish with a sprinkle of fresh chopped parsley.
