Ingredients
- 4 large russet or Yukon Gold potatoes, peeled and diced into 1/2-inch cubes
- 2 tablespoon vegetable oil
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- Fresh cilantro, chopped (for garnish)
Instructions
1. Heat the vegetable oil in a large skillet over medium heat.
2. Add the diced potatoes to the hot oil and cook for 15 minutes, stirring occasionally, until they are golden brown and crispy.
3. In a small bowl, combine the salt, smoked paprika, chili powder, cumin, and cayenne pepper.
4. Sprinkle the spice mixture over the cooked potatoes and stir to coat them evenly.
5. Add the minced garlic to the skillet and cook for 1-2 minutes, until fragrant.
6. Remove the skillet from the heat and drizzle the fresh lime juice over the seasoned potatoes.
7. Sprinkle the chopped cilantro over the Mexican-Style Street Potatoes and serve hot.
