  • 1 lb Beef Tenderloin (cut into 1-inch cubes)
  • 1 sheet Puff Pastry (thawed)
  • 8 oz Mushrooms (finely chopped, cremini or button)
  • 2 tbsp Dijon Mustard
  • 1 tbsp Olive Oil
  • 1 Egg (beaten, for egg wash)
  • Salt and Pepper (to taste)

Instructions

  1. Season the beef cubes generously with salt and pepper. In a hot pan with olive oil, sear the beef for 1-2 minutes per side until a nice crust forms. Allow the beef to cool slightly.
  2. In the same pan, sauté the finely chopped mushrooms over medium-high heat until they’ve released their moisture and become dry. Once cooked, let the mushrooms cool, then mix them with Dijon mustard.
  3. Unfold the thawed puff pastry sheet and cut it into squares, approximately 3-4 inches in size. Place a spoonful of the mushroom mixture in the center of each square, then top with a seared beef cube. Wrap the puff pastry around the beef, pinching and sealing the edges.
  4. Arrange the assembled Mini Beef Wellingtons on a baking sheet, brush the tops with beaten egg wash. Bake in a preheated oven at 400°F (200°C) for 15-18 minutes until the pastry is puffed and golden.
  5. Allow the Mini Beef Wellingtons to rest for a few minutes before serving.
