Ingredients

  • 1 pound kielbasa sausage
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoon brown sugar
  • 4 cloves garlic, minced
  • 2 medium sweet potatoes, diced
  • 2 medium Yukon gold potatoes, diced
  • 2 cup broccoli florets
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 medium red onion, sliced

Instructions

1. Preheat the oven to 400°F. Line a large sheet pan with parchment paper or aluminum foil.

2. In a small bowl, whisk together honey, olive oil, Dijon mustard, brown sugar, and minced garlic to make the honey garlic sauce. Reserve some sauce for drizzling later.

3. Spread 1 tablespoon of olive oil on the prepared sheet pan. Arrange diced sweet potatoes and Yukon gold potatoes in a single layer. Sprinkle with kosher salt and black pepper, tossing to coat evenly. Add sliced kielbasa sausage and brush generously with honey garlic sauce.

4. Bake for 20 minutes. Add broccoli florets drizzled with olive oil, salt, and pepper. Return to the oven for another 5-10 minutes until broccoli is tender-crisp.

5. Remove from the oven and drizzle reserved honey garlic sauce over the dish before serving.

Notes

For even roasting, cut vegetables into similar-sized pieces.

For a spicier version, add red pepper flakes or sriracha to the sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
