Ingredients
Scale
- 1 lb smoked sausage, sliced
- 1 cup long-grain white rice
- 1 onion, finely diced
- 1 red bell pepper, diced
- 2 cups chicken broth
- 1/2 cup BBQ sauce (your favorite)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Ingredients: Slice the smoked sausage into bite-sized pieces. Dice the onion and red bell pepper.
- Sauté the Sausage and Vegetables: Heat the olive oil in a large skillet over medium heat. Add the sausage slices and cook for about 5 minutes, or until browned. Add the onion and red bell pepper to the skillet and sauté for another 3-4 minutes until softened.
- Add the Rice and Seasonings: Stir in the rice, garlic powder, paprika, salt, and black pepper. Mix until the rice is well coated with the seasonings.
- Pour in the Chicken Broth and BBQ Sauce: Add the chicken broth and BBQ sauce to the skillet. Stir until everything is well combined.
- Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Serve: Fluff the rice with a fork and garnish with fresh parsley if desired. Serve hot and enjoy!
Notes
- Feel free to adjust the BBQ sauce to your preferred level of sweetness or tanginess.
- You can swap the smoked sausage with other types of sausage, such as chicken sausage, for a lighter version.
- Add other vegetables like corn or peas for extra flavor and nutrition.
