Cozy Up to This Hearty One-Pot Autumn Beef Stew
Ingredients
- 2 pound beef chuck, cut into 1-inch cubes
- 4 cup beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Brown the beef cubes on all sides, working in batches if needed, for about 5-7 minutes.
3. Add the chopped onions and minced garlic to the pot; sauté until softened, about 3-4 minutes.
4. Stir in the sliced carrots, diced potatoes, and mushrooms; cook for 2-3 minutes.
5. Mix in the tomato paste, dried thyme, dried rosemary, salt, and pepper to coat the ingredients.
6. Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
7. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, until the beef is tender.
8. Taste and adjust the seasoning as needed before serving hot.
