Description

One-Pot Cheesy Southwest Chicken & Rice is a flavor-packed, family-friendly meal that combines tender chicken, fluffy rice, and creamy cheese with bold Southwestern flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 1 tablespoon taco seasoning
  • Salt and black pepper to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cup chicken broth
  • 1 cup salsa
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 cup corn, canned/drained or frozen/thawed
  • 1 1/2 cup shredded cheddar or Mexican blend cheese
  • 2 tablespoon lime juice
  • 2 tablespoon chopped cilantro (optional)

Instructions

1. Heat the olive oil in a large pot or deep skillet over medium-high heat. Add the chicken, taco seasoning, salt, and pepper. Cook for 4 to 6 minutes until the chicken is lightly browned.

2. Add the onion and cook for 2 to 3 minutes until softened. Then, add the garlic and cook for 30 seconds, stirring constantly to prevent burning.

3. Stir in the rice, chicken broth, and salsa. Bring the mixture to a boil.

4. Reduce the heat to low, cover the pot, and simmer for 18 to 22 minutes, stirring once halfway, until the rice is tender and the liquid is absorbed.

5. Stir in the black beans, corn, lime juice, and 1 cup of the shredded cheese. Top with the remaining 1/2 cup of cheese, cover, and let sit for 2 to 3 minutes until the cheese is melted.

6. Sprinkle with fresh cilantro, if desired, and serve hot.

Notes

This dish can be prepared ahead of time and stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
