Instructions

1. Heat the olive oil in a large pot over medium-high heat. Add the mushrooms in batches, cooking until they’re golden brown. Season with salt and pepper, then transfer the mushrooms to a bowl and set them aside.

2. Add 1 tablespoon of butter to the same pot. Sauté the diced onion over medium heat until softened, about 5 minutes. Then, add the minced garlic and cook for an additional minute, until fragrant.

3. Stir in the orzo and cook for 1-2 minutes, stirring frequently, to toast the pasta slightly.
