Cozy Up to One Pot Irish Chicken: A Hearty, Flavor-Packed Meal
Ingredients
- 8 pieces chicken thighs
- 5 slices bacon
- 1/2 cup chicken stock
- 1 1/2 teaspoon thyme
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 small head cabbage, chopped
- 2 medium potatoes, sliced
- 1 medium onion, sliced
Instructions
1. Combine the dry rub ingredients: thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper in a small bowl.
2. Generously rub the spice mixture all over the chicken thighs.
3. In a large pot or Dutch oven, cook the bacon until crispy. Remove the bacon and reserve the fat.
4. Sear the seasoned chicken thighs on both sides until golden-brown, about 3-4 minutes per side.
5. Layer the chopped cabbage, sliced potatoes, and sliced onion in the pot.
6. Pour the chicken stock over the vegetables.
7. Place the seared chicken thighs on top of the vegetables and cover.
8. Simmer on medium-low heat for 35-40 minutes until the chicken is cooked through and vegetables are tender.
9. Season with additional salt and pepper to taste before serving.
Notes
Serve warm, garnished with crispy bacon crumbles for extra flavor and texture.
