Ingredients
- 1 tablespoon olive oil
- 1 pound smoked kielbasa or turkey/chicken sausage, sliced 1/4 inch thick
- 1 cup diced onion (about 1 medium onion)
- 2 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 1 cup canned diced tomatoes with juice
- 8 ounces small dry pasta (about 2 cups; penne, rotini, or shells)
- 1/2 cup milk or heavy cream
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 cup shredded Cheddar cheese (about 4 ounces)
- 2 tablespoons thinly sliced scallions (green onions), for garnish
Instructions
1. Start by heating the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced kielbasa and cook, stirring occasionally, until it’s nicely browned, about 4-5 minutes.
2. Next, stir in the diced onion and cook until it’s softened, about 3 minutes. Then, add the minced garlic and cook for an additional 30 seconds, until fragrant.
3. Pour in the chicken broth, diced tomatoes with their juice, and the dry pasta. Season with the salt and pepper, then give everything a good stir to combine.
4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
5. Finally, stir in the milk or cream and the shredded cheddar cheese. Cook for an additional 2-3 minutes, stirring constantly, until the cheese is melted and the sauce is creamy and smooth.
6. Top your delicious One Pot Kielbasa Pasta with the sliced scallions and serve it warm straight from the pot. Enjoy!
Notes
To store any leftover One Pot Kielbasa Pasta, allow it to cool completely, then transfer it to an airtight container. It will keep in the refrigerator for 3-4 days. For longer storage, you can freeze the pasta in a freezer-safe container for up to 2-3 months. Reheat gently on the stovetop or in the microwave, adding a splash of broth or milk if it seems too dry.
