Ingredients
1 tbsp olive oil
1 lb kielbasa, sliced
1 small onion, chopped
2 cups baby spinach
1 lb potato gnocchi
1 ½ cups chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
½ tsp garlic powder
Salt and pepper to taste
Chopped chives for garnish
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the sliced kielbasa and brown until seared and flavorful. Remove and set aside.
2. Add the chopped onion to the skillet and sauté until soft and translucent, about 5 minutes. Stir in the baby spinach and let it wilt.
3. Add the potato gnocchi, chicken broth, and heavy cream to the skillet. Bring to a simmer and cook for 8-10 minutes, until the gnocchi is tender and the sauce has thickened.
4. Stir in the shredded cheddar cheese, garlic powder, and season with salt and pepper. Adjust seasoning to taste.
5. Serve in bowls, garnished with chopped chives.
