Ingredients
1 tbsp olive oil
1 lb chicken sausage, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
8 oz penne pasta
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan
Salt and pepper to taste
Fresh basil for garnish
Instructions
1. In a large pot, heat the olive oil over medium-high heat. Add the sliced chicken sausage and cook until it’s nicely browned.
2. Stir in the sliced bell peppers, zucchini, and cherry tomatoes. Cook until softened, about 5–7 minutes.
3. Add the penne pasta, chicken broth, and heavy cream. Bring to a boil, then reduce heat and simmer for 12–15 minutes, or until pasta is tender.
4. Stir in the grated Parmesan cheese, salt, and pepper to taste.
5. Serve hot and garnish with fresh basil.
