  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 2 cup fresh cheese tortellini (or ravioli)
  • 4 cloves garlic, minced
  • 4 tablespoon butter
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon fresh basil or parsley, chopped
  • Salt and black pepper to taste

Instructions

1. Cook the Chicken: In a large skillet or pot, melt 2 tablespoon of butter over medium heat. Season the chicken with salt and pepper, then cook until golden brown and fully cooked. Remove the chicken from the pot and set it aside.

2. Sauté the Garlic: In the same pot, melt the remaining 2 tablespoon of butter. Add the minced garlic and crushed red pepper flakes, cooking until fragrant, about 1-2 minutes.

3. Add the Broth and Pasta: Pour in the chicken broth and bring it to a simmer. Add the cheese tortellini and cook according to the package directions until tender.

4. Stir in the Cream and Cheese: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Allow the sauce to thicken and coat the tortellini, about 2-3 minutes.

5. Finish and Serve: Add the cooked chicken back to the pot and stir to combine. Garnish with fresh chopped basil or parsley and serve hot for a comforting one-pot meal.

Notes
