Ingredients
- 2 cup buttermilk pancake mix
- 1 pound breakfast sausage (bulk or links)
- 4 large eggs
- 1 cup whole milk
- 1/2 cup pure maple syrup
- 2 tablespoon butter (for greasing)
Instructions
1. Preheat your oven to 350°F. Grease a large baking dish with 2 tablespoon of butter.
2. In a skillet over medium heat, cook the breakfast sausage until it’s browned and crumbly. Drain any excess grease from the pan.
3. In a bowl, combine the pancake mix, milk, and eggs. Gently mix until just combined – a few lumps are perfectly fine.
4. Fold in half of the maple syrup and some of the cooked sausage bits.
5. Pour half of the batter into the prepared baking dish. Sprinkle the remaining sausage evenly over the top, then pour the rest of the batter over the sausage.
6. Bake the casserole uncovered for 30-35 minutes, or until it’s golden brown and springy to the touch.
7. Allow the casserole to cool slightly, then cut it into squares and drizzle the remaining maple syrup over the top.
