  • 1/2 cup milk
  • 3 large eggs

  • 4 ripe peaches, sliced
  • For the custard filling:
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • For the crumble topping:
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup butter, softened
  • 1 cup flour

Instructions

1. Activate the yeast by combining sugar, yeast, and warm water until bubbly.

2. Mix all-purpose flour, bread flour, eggs, sugar, and softened butter to form the brioche dough.

3. Let the dough rise until it doubles in size.

4. Prepare the custard filling by heating milk and whisking eggs with cornstarch and sugar.

5. Combine hot milk with the egg mixture and cook until thickened.

6. Prepare the crumble topping by mixing brown sugar, granulated sugar, softened butter, flour, and lemon zest.

7. Roll out the dough and place it in a greased tart or baking pan.

8. Spread the cooled custard over the dough and layer with sliced peaches.

9. Sprinkle the crumble topping over the peaches.

10. Brush the edges with beaten egg wash before baking.
