Ingredients
- 4 boneless thick-cut pork chops

- 1/8 teaspoon black pepper

- 2 yellow peaches, pitted and sliced
Instructions
1. Pat the pork chops dry with paper towels, then generously season both sides with kosher salt, black pepper, and a sprinkle of chili powder (if desired).
2. Heat a large non-stick skillet over medium heat and add the olive oil. Once the oil is shimmering, carefully add the seasoned pork chops and cook for about 7-10 minutes per side, or until the internal temperature reaches a juicy 145°F.
3. In the same skillet, add the sliced peaches and cook for about 3 minutes until they begin to soften.
4. In a small bowl, whisk together the peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, pepper, and optional red pepper flakes.
5. Return the pork chops to the skillet and spoon the peach glaze mixture over them. Allow the flavors to mingle for an additional 1-2 minutes.
