Description
A comforting one-pan dish combining fluffy pierogis with smoked sausage and fresh vegetables.
Ingredients
- 1 package (16 ounce) frozen potato and cheese pierogis
- 1 pound smoked sausage (kielbasa), sliced
- 1 cup diced onion
- 2 cup fresh baby spinach
- 1 cup sliced red bell pepper
- 2 cloves minced garlic
- 2 tablespoon olive oil
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Fresh parsley (optional)
Instructions
1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set it aside.
2. In the same skillet, add another tablespoon of olive oil. Sauté the diced onion and sliced red bell pepper for 4-5 minutes, until they’re softened.
3. Stir in the minced garlic and paprika, cooking for an additional minute until fragrant.
4. Carefully add the frozen pierogis to the skillet, gently tossing to combine with the onion and pepper mixture. Cook for 7-10 minutes, allowing the pierogis to brown slightly, flipping them occasionally.
5. Once the pierogis are heated through and lightly browned, return the cooked sausage to the skillet. Add the fresh baby spinach and toss everything together until the spinach wilts, about 2 minutes.
6. Season the Pierogi Sausage Skillet with salt and pepper to taste. Remove from heat and serve hot, garnished with fresh parsley if desired.
Notes
This dish can be customized by adding different vegetables or proteins. It can also be served over mashed potatoes or egg noodles for a complete meal.
