Description

Prepare to embark on a delightful culinary journey with our mouthwatering Pineapple Chicken and Rice recipe! This vibrant and flavor-packed dish is a true family favorite, combining the sweet and tangy notes of fresh pineapple with the juicy goodness of tender chicken.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast, cut into bite-sized chunks
  • 1 tablespoon olive oil or sesame oil
  • 2 garlic cloves, minced
  • 1/2 cup soy sauce (low-sodium if you’re watching your salt intake)
  • 1/3 cup pineapple juice (from the can is perfectly fine)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch + 1 tablespoon water (for thickening the sauce)
  • 1 1/2 cups cooked rice (white, brown, or jasmine – your choice)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Sesame seeds
  • Extra chopped green onions
  • Crushed red pepper flakes

Instructions

1. Begin by heating the olive oil or sesame oil in a large skillet over medium-high heat. Add the cubed chicken and cook until it’s browned and fully cooked, about 5-7 minutes. Once the chicken is ready, add the minced garlic and sauté for an additional 30 seconds.

2. In a small bowl, whisk together the soy sauce, pineapple juice, honey (or brown sugar), and vinegar. Pour this flavorful sauce into the skillet with the cooked chicken, bringing the mixture to a simmer.

3. To thicken the sauce, combine the cornstarch and water in a small bowl, then stir the mixture into the skillet. Allow the sauce to cook for 2-3 minutes, stirring occasionally, until it reaches your desired consistency.

4. Now it’s time to incorporate the remaining ingredients. Stir in the pineapple chunks, diced red bell pepper, and chopped green onions. Let everything heat through for about 2 minutes, ensuring the vegetables are just slightly softened but still retain their vibrant colors.

5. To serve, spoon the Pineapple Chicken mixture over a bed of warm, cooked rice. Finish off your Pineapple Chicken and Rice by garnishing with any of the optional toppings, such as sesame seeds, extra green onions, or a sprinkle of crushed red pepper. Serve this vibrant and satisfying dish hot, and enjoy the harmonious blend of sweet, savory, and tangy flavors in every bite.

Notes

For the best results, opt for boneless, skinless chicken breasts. If you prefer dark meat, boneless, skinless chicken thighs are also a delicious option.

While white rice is a classic choice, feel free to experiment with different rice varieties, such as brown rice or fragrant jasmine rice. If you’re short on time, you can even use pre-cooked or microwavable rice to streamline the preparation process.
