Ingredients
- 2 tablespoon olive oil
- 1 pound chicken breast, bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoon honey
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh pineapple, diced
- 1 red bell pepper, chopped
- 1 cup frozen peas
- 1/4 cup fresh cilantro or parsley, for garnish
Instructions
1. Heat the oil in a large skillet over medium heat.
2. Cook the chicken until lightly browned and cooked through, then remove and set aside.
3. Sauté the onion and garlic until fragrant and translucent.
4. Add the rice, chicken broth, soy sauce, honey, ginger, and cumin. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
5. Fold in the pineapple, red bell pepper, and peas. Cook for an additional 5 minutes.
6. Return the chicken to the pan, mix gently, and season with salt and pepper. Garnish with cilantro or parsley before serving.
