Ingredients
- 2 tablespoon olive oil
- 2 cup diced potatoes
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 cloves garlic, minced
- 4 large eggs
- 1/4 cup milk
- 1 cup shredded cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked meat (optional)
- 2 tablespoon fresh herbs (optional)
Instructions
1. In a large skillet or frying pan, heat the olive oil over medium heat.
2. Add the diced potatoes, onion, and bell pepper to the pan. Sauté until the potatoes are golden brown and the vegetables are tender, about 8-10 minutes. Stir in the minced garlic and cook for 1 minute more.
