Ingredients
- 1 cup pumpkin puree
- 2 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
1. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl. Set aside.
2. In a large bowl, cream the butter and both sugars together until light and fluffy. Beat in the eggs one at a time, followed by the pumpkin puree and vanilla extract. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips last.
3. Scoop the dough by the tablespoonful onto prepared baking sheets, spacing them about 2 inches apart. Bake at 350°F for 12-15 minutes, until the edges are set and the centers are still slightly soft.
4. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
