Description

Pumpkin French Toast Breakfast is a delightful way to celebrate the flavors of fall. By combining the richness of pumpkin puree with the classic comfort of French toast, you can create a cozy and indulgent breakfast that will have your taste buds singing.

Ingredients

Scale
  • 4 slices thick bread
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 tablespoon brown sugar
  • Butter or oil for cooking
  • Maple syrup for serving
  • Powdered sugar for garnish
  • Chopped pecans or walnuts for topping

Instructions

1. In a large mixing bowl, combine the pumpkin puree, eggs, and milk. Whisk until smooth. Add vanilla extract, ground cinnamon, ground nutmeg, ground ginger, salt, and brown sugar (if using). Whisk again and let sit for a few minutes.

2. Preheat a large skillet or griddle over medium heat. Add 1 tablespoon of butter or oil. Dip each slice of bread into the batter, coating both sides. Place on the skillet and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes. Repeat with remaining slices, adding more butter or oil as needed.

Notes

For dietary restrictions, substitute gluten-free bread or non-dairy milk. Brown sugar can be replaced with a sugar-free alternative or omitted for a less sweet version.
