Ingredients
- 1 pound rainbow carrots, peeled
- 2 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
- 1 cup whole milk ricotta cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon salt
- 1 teaspoon olive oil
- 2 tablespoon honey
- 3/4 teaspoon Calabrian chile paste
Instructions
1. Preheat your oven to 400°F.
2. Wash and peel the carrots, then place them on a large baking sheet. If using large carrots, slice them in half lengthwise to ensure even cooking.
3. Drizzle the carrots with olive oil and sprinkle them with salt, pepper, and thyme. Toss everything together until the carrots are evenly coated.
4. Spread the carrots in a single layer on the baking sheet and roast them for 25-30 minutes, turning them halfway through. Keep an eye on them until they’re tender and caramelized around the edges.
5. While the carrots are roasting, combine the ricotta, lemon juice, lemon zest, and salt in a food processor. Pulse to combine, then stream in the olive oil and process until smooth and fluffy, about 1-2 minutes.
