Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 2 cup fresh spinach, washed and dried
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a pan, heat the olive oil over medium heat. Add the fresh spinach and sauté for 2-3 minutes, until it’s wilted. Remove the pan from the heat and let the spinach cool slightly.
3. In a bowl, combine the sautéed spinach, chopped roasted red peppers, and shredded mozzarella cheese.
4. Carefully cut a pocket into the side of each chicken breast. Stuff each pocket with the spinach mixture, using about 1/4 to 1/3 cup per breast.
5. Sprinkle the garlic powder, salt, and pepper over the stuffed chicken breasts, seasoning them to your taste.
6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
7. Let it rest for 5 minutes before slicing and serving.
