Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
1. Preheat your oven to 375°F and lightly grease a baking dish.
2. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and paprika.
3. In a bowl, combine the chopped spinach, sun-dried tomatoes, crumbled feta, minced garlic, and dried oregano.
4. Butterfly each chicken breast, pound to an even thickness, spoon the filling onto each breast, and roll them up tightly.
5. Brown the rolled chicken in a skillet with olive oil if desired.
6. Place the rolled chicken in the baking dish, seam-side down, and bake for about 25–30 minutes or until cooked through.
