  • 3 green onions, sliced
  • 2 red chilies, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • ½ teaspoon sugar

Instructions

1. Marinate the Chicken: In a bowl, mix the chicken with soy sauce and Shaoxing wine. Let the mixture sit for 10 minutes to allow the flavors to infuse.

2. Prepare the Coating: In a separate bowl, combine the cornstarch, Chinese five-spice powder, salt, and 1 tablespoon black pepper.

3. Coat the Chicken: Add the marinated chicken to the cornstarch mixture and toss until the chicken is evenly coated.

4. Fry the Chicken: Heat vegetable oil in a wok or deep pan to 350°F. Fry the chicken in batches for 6-8 minutes, until golden and crispy. Drain the chicken on paper towels.

5. Stir-Fry the Aromatics: Remove most of the oil, leaving about 2 tablespoon. Add the onion, white parts of the green onions, and chilies. Stir-fry for 2-3 minutes. Then, add the garlic, ginger, sugar, and the remaining 1 teaspoon of black pepper. Cook for 1 minute.

6. Combine and Serve: Return the fried chicken to the wok and toss everything together for 1-2 minutes. Garnish with the remaining green onions and serve with steamed rice.
