Ingredients

  • 1 cup unsalted butter, softened

  • ½ cup granulated sugar

  • 1/3 cup honey

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 cup shelled pistachios, coarsely chopped

For the topping:

  • 1 tablespoon coarse sea salt

  • 2 tablespoons honey (optional, for drizzling)


Instructions

  • Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Cream butter & sugar: In a large mixing bowl, beat softened butter and granulated sugar until light and fluffy. Add the honey, egg, and vanilla extract, mixing until smooth.

  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

  • Add pistachios: Fold the chopped pistachios into the dough.

  • Form dough balls: Scoop out tablespoon-sized dough balls and place them onto the prepared baking sheet.

  • Bake: Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

  • Top & drizzle: While the cookies are still warm, sprinkle coarse sea salt on top. Drizzle with honey if desired. Allow to cool completely before serving.

Notes

  • For a different twist, try adding a bit of cinnamon or cardamom to the dough.

  • Store cookies in an airtight container at room temperature for up to 1 week.

  • If you prefer a slightly softer texture, slightly underbake the cookies for 9-10 minutes.
