For the topping:

1 tablespoon coarse sea salt

2 tablespoons honey (optional, for drizzling)
Instructions

Preheat oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream butter & sugar: In a large mixing bowl, beat softened butter and granulated sugar until light and fluffy. Add the honey, egg, and vanilla extract, mixing until smooth.

Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

Add pistachios: Fold the chopped pistachios into the dough.

Form dough balls: Scoop out tablespoon-sized dough balls and place them onto the prepared baking sheet.

Bake: Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Top & drizzle: While the cookies are still warm, sprinkle coarse sea salt on top. Drizzle with honey if desired. Allow to cool completely before serving.
