Ingredients

  • 1 lb Italian sausage, sliced
  • 2 medium zucchinis, sliced
  • 1 cup chopped bell peppers
  • 1/2 cup diced onion
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1/2 tsp Italian seasoning

Instructions

1. Begin by heating a large skillet over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 6–8 minutes. Once done, remove the sausage from the skillet and set it aside.

2. In the same skillet, add the olive oil. Sauté the diced onion and minced garlic for 1–2 minutes until fragrant. Then, stir in the chopped bell peppers and sliced zucchini. Cook for 5–7 minutes, or until the vegetables are tender.

3. Return the cooked sausage to the skillet. Sprinkle the Italian seasoning over the top and stir everything together. Cook for an additional 2–3 minutes to allow the flavors to blend.

4. Serve the Sausage and Zucchini Skillet hot, either as a low-carb main dish or a savory side.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place the skillet in the microwave or on the stovetop over medium heat until heated through. This dish also freezes well for longer-term storage.
