  • 4 cup potatoes, cubed
  • 4 cup chicken bone broth
  • 1 cup heavy whipping cream or half & half
  • 4 cup kale, chopped

Instructions

1. Brown the sausage: In a large pot, cook the sliced sausage over medium heat until it’s beautifully browned, about 5-7 minutes. Remove the sausage and set it aside.

2. Sauté the aromatics: In the same pot, sauté the chopped onion and minced garlic until they’re softened and fragrant, about 3-4 minutes.

3. Add spices: Stir in the smoked paprika and cook for an additional minute to release its flavor.

4. Combine ingredients: Add the cubed potatoes, chicken bone broth, and the browned sausage back into the pot. Bring the mixture to a boil.

5. Simmer: Reduce the heat to low and let the soup simmer until the potatoes are tender, about 15-20 minutes.

6. Add kale: Stir in the chopped kale and let it cook until it’s wilted, about 5 minutes.

7. Finish the soup: Pour in the heavy cream or half & half, stirring gently to combine. Simmer for an additional 5 minutes to let the flavors meld.
