Description
Cozy and Comforting Sausage Potato and Kale Soup is a hearty, soul-warming dish that combines smoky sausage, creamy potatoes, and nutrient-packed kale.
Ingredients
- 1 pound smoked sausage (Kielbasa or Andouille)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon smoked paprika
- 4 cup potatoes, cubed
- 4 cup chicken bone broth
- 1 cup heavy whipping cream or half & half
- 4 cup kale, chopped
Instructions
1. Brown the sausage: In a large pot, cook the sliced sausage over medium heat until it’s beautifully browned, about 5-7 minutes. Remove the sausage and set it aside.
2. Sauté the aromatics: In the same pot, sauté the chopped onion and minced garlic until they’re softened and fragrant, about 3-4 minutes.
3. Add spices: Stir in the smoked paprika and cook for an additional minute to release its flavor.
4. Combine ingredients: Add the cubed potatoes, chicken bone broth, and the browned sausage back into the pot. Bring the mixture to a boil.
5. Simmer: Reduce the heat to low and let the soup simmer until the potatoes are tender, about 15-20 minutes.
6. Add kale: Stir in the chopped kale and let it cook until it’s wilted, about 5 minutes.
7. Finish the soup: Pour in the heavy cream or half & half, stirring gently to combine. Simmer for an additional 5 minutes to let the flavors meld.
8. Serve: Ladle the piping hot soup into bowls and enjoy!
Notes
For a low-carb option, replace potatoes with an equal amount of cauliflower florets.
For a vegetarian or vegan adaptation, swap the sausage for a plant-based alternative.
