Instructions

1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles as it cooks. If there is excess grease, feel free to drain it off.

2. Stir in the diced onion and minced garlic. Cook until the onion is softened and fragrant, about 3-5 minutes.

3. Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

4. Pour in the heavy cream or half-and-half. Add the salt, black pepper, and dried thyme (or Italian seasoning). Simmer for an additional 5 minutes to allow the flavors to meld.
