Ingredients
- 1 pound Italian sausage
- 2 cup bell peppers, sliced
- 1 cup red onion, sliced
- 2 cup broccoli florets
- 1 medium zucchini, sliced
- 1 pound baby potatoes, halved
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F and line a large sheet pan with parchment paper.
2. In a large bowl, toss the sliced bell peppers, onion, broccoli florets, zucchini, and halved baby potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until everything is evenly coated.
3. Slice the Italian sausages into 1-2 inch pieces and add them to the vegetable mixture, tossing to combine.
4. Spread the sausage and veggie mixture out in a single layer on the prepared sheet pan.
5. Roast in the oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized and the sausage is cooked through.
6. Garnish with fresh parsley if desired and serve warm.
