Description
Get ready for an explosion of flavors with this mouthwatering Shrimp and Asparagus Stir-Fry! Tender shrimp, crisp-tender asparagus, and savory mushrooms come together in a delectable dish that’s perfect for a quick and healthy weeknight meal.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 bunch asparagus, cut into 2-inch pieces
- 8 ounce mushrooms, sliced
- 3 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoon vegetable oil
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Instructions
1. Before you start cooking, take a few minutes to prepare your ingredients. Peel and devein the shrimp if necessary. Cut the asparagus into 2-inch pieces and slice the mushrooms.
2. To add an extra layer of flavor to your shrimp and asparagus stir-fry, take a moment to marinate the shrimp. In a bowl, combine the shrimp with 1 tablespoon of soy sauce and a pinch of salt. Let the shrimp marinate for about 10 minutes.
3. In a large skillet or wok, heat the vegetable oil over medium-high heat until it’s shimmering. Add the minced garlic and grated ginger to the pan and stir for about 30 seconds, until fragrant.
4. Next, add the marinated shrimp to the pan and cook for 2-3 minutes, until they begin to turn pink. Don’t overcrowd the pan; work in batches if necessary to ensure even cooking.
5. Stir in the asparagus pieces and sliced mushrooms, and continue cooking for another 3-5 minutes, or until the asparagus is tender-crisp and the mushrooms have softened.
6. To finish the dish, pour in the remaining 2 tablespoon of soy sauce and the oyster sauce (if using). Toss everything together, ensuring the flavors are evenly distributed.
7. Take a moment to taste your shrimp and asparagus stir-fry and adjust the seasoning with salt and pepper as needed. For a final touch of richness, drizzle the sesame oil over the top of the stir-fry.
8. Serve your delectable shrimp and asparagus stir-fry immediately, either over a bed of fluffy cooked rice or alongside a tangle of noodles.
Notes
This dish is best enjoyed fresh but can be prepared in advance by marinating the shrimp a few hours ahead and chopping the asparagus and mushrooms a day before cooking.
