Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup sliced mushrooms
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Instructions

1. Heat olive oil in a large skillet or wok over medium-high heat.

2. Add shrimp and cook for 2-3 minutes, or until pink and slightly curled. Remove shrimp and set aside.

3. In the same pan, sauté garlic, asparagus, and mushrooms for 4-5 minutes, stirring frequently.

4. Return cooked shrimp to the pan, add soy sauce and lemon juice. Season with salt and black pepper.

5. Stir until combined and shrimp is heated through, about 1-2 minutes.

6. Serve over steamed rice or noodles, or enjoy on its own.
