Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb smoked sausage, preferably andouille
- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 1 stalk celery, diced
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 2 cups chicken broth
- 2 tablespoons olive oil
- Green onions, for garnish
Instructions
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the sliced smoked sausage and cook for 4-5 minutes until browned.
3. Transfer the sausage to a plate and set aside.
4. In the same pot, sear the shrimp for 1-2 minutes per side until pink and set aside.
5. Reduce heat to medium and add onion, bell pepper, and celery. Sauté for about 4 minutes until softened.
6. Stir in minced garlic and cook for an additional 30 seconds.
7. Add the rinsed rice to the pot, stirring to coat.
8. Sprinkle in Cajun seasoning and smoked paprika, then pour in chicken broth.
9. Bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
10. Return the sausage and shrimp to the pot, folding them into the rice.
11. Heat everything through for 2-3 minutes and garnish with green onions.
