Ingredients
- 2 pound beef chuck, cut into 1-inch cubes
- 1 cup red wine (preferably Burgundy)
- 2 cup beef broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cup mushrooms, sliced
- 2 carrots, sliced
- 2 tablespoon tomato paste
- 2 tablespoon flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoon olive oil
- Fresh parsley, chopped for garnish
Instructions
1. In a skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then brown them on all sides. Transfer the beef to your slow cooker.
2. In the same skillet, sauté the onions, carrots, and garlic for about 5 minutes until softened. Add the mushrooms and cook for an additional 3 minutes.
3. Add the sautéed vegetables to the slow cooker with the browned beef. Pour in the red wine, beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaf. Sprinkle in the flour and stir everything together to combine.
