  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups sliced potatoes (about 1.5 pounds)
  • 1 cup shredded cheese (cheddar or your preference)

Instructions

  • Cook the Ground Beef:
    In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat and transfer the beef to the slow cooker.

  • Add Vegetables and Beans:
    Add the chopped onion, minced garlic, kidney beans, diced tomatoes with green chilies, frozen corn, chili powder, salt, and black pepper to the slow cooker. Stir well to combine.

  • Prepare the Potatoes:
    Layer the sliced potatoes evenly on top of the mixture in the slow cooker. Pour the milk and cream of mushroom soup over the potatoes, making sure they are covered evenly.

  • Cook:
    Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are tender and the casserole is bubbly.

  • Add the Cheese:
    In the last 10 minutes of cooking, sprinkle the shredded cheese over the top of the casserole. Cover and let the cheese melt.
