Ingredients
- 2 pound beef stew meat
- 5 tablespoon butter, cut into chunks
- 6 cloves garlic, minced
- 1 pound baby potatoes, halved if large
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Add the baby potatoes to the bottom of the slow cooker.
2. Top the potatoes with the beef stew meat chunks.
3. Scatter the minced garlic over the beef and place the butter chunks on top.
4. In a small bowl, whisk together the beef broth, Worcestershire sauce, and soy sauce. Pour this mixture over the meat and potatoes.
5. Sprinkle the thyme, rosemary, salt, and pepper over everything.
6. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is fork-tender and the potatoes are cooked through.
7. Give everything a gentle stir, garnish with fresh parsley, and serve hot.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, warm in a saucepan or microwave-safe bowl until heated thoroughly.
