Description
Smashed Carrots are roasted carrot rounds that have been gently pressed to create a unique texture, bursting with flavor and crispy edges.
Ingredients
- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Boil Carrots: Begin by placing the carrot rounds in a pot of salted water. Bring the water to a boil and cook the carrots for 10-12 minutes, or until they’re fork-tender. Drain the carrots and let them cool slightly.
2. Smash Carrots: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Gently place the cooked carrot rounds on the prepared baking sheet and use the bottom of a glass or jar to lightly press down on each round, flattening them slightly.
3. Season: Drizzle the flattened smashed carrots with the olive oil, making sure to coat them evenly. Sprinkle the Parmesan cheese, garlic powder, and smoked paprika over the top. Season with salt and black pepper to taste.
4. Bake: Pop the seasoned smashed carrots into the preheated oven and roast for 15-20 minutes, or until the edges are golden and crispy.
5. Garnish & Serve: Remove the smashed carrots from the oven and sprinkle with fresh, chopped parsley. Serve warm as a side dish or snack.
Notes
For a fragrant twist, add chopped fresh herbs like rosemary or thyme before baking.
For a spicy kick, sprinkle with cayenne pepper or chili powder.
For a sweet version, toss with brown sugar or honey before roasting.
